Zucchini Spears and Red Potatoes

Tonight for dinner, I didn’t have a particular dish in mind, so I opted for finishing off odds and ends I’ve had for a little while. First I had a small piece of fish (not pictured). Then I cut up zucchini into spears and combined with a little olive oil on the stove.

This is so tasty I didn’t even add any spices to it.

Next I chopped up some red potatoes and roasted them in foil with a butter substitute spray. Once they were cooked, I added sharp cheddar cheese. Ooey goodness.

Then I finished off with Red Brick’s Brick Mason Double IPA — a great local craft beer.
