Mmm… dilla

My No. 1 go-to: the veggie/black bean quesadilla:

I sauté and season what ever veggies are around/need to be used, such as broccoli, mushrooms, squash, zucchini. (One of my favorite seasonings is Mrs. Dash Fiesta Lime.)

Then I like to use a spinach or tomato/basil tortilla with black beans and sharp cheddar cheese. Let’s face it, a meal doesn’t feel like a meal without cheese. Grilled to perfection. Yum.
